LANSING, Mich. (WLNS) – On this week’s Wellness Wednesday, Registered Dietitian Sarah Smith with College of Michigan Well being-Sparrow teaches our Megan Viecelli methods to make the right end-of-summer facet dish (or dessert!) – blueberry salsa.
Substances:
1 1/2 cups blueberries
2 oranges
1/4 cup purple onion, finely chopped
2 Tbsp balsamic vinegar
1 Tbsp snipped recent mint
Pinch of sea salt
Instructions:
Coarsely chop 1/2 cup blueberries and place in a medium bowl.
Add 1 cup complete blueberries.
Utilizing a pointy knife, minimize away zest and white a part of rind from 2 oranges, reserving juices.
Coarsely chop orange sections.
Add sections and juices to the bowl.
Stir in chopped purple onion, balsamic vinegar, mint, and sea salt.
Serve with cinnamon sugar graham crackers or pita chips.

“Overall, this dessert salsa has absolutely no added sugar,” Sarah Smith, MS, RDN, Registered Dietitian with College of Michigan Well being-Sparrow, stated. “It’s very high in fiber and very flavorful.”
